
Chia Seed Parfait 2 Ways
Oh my Chia! Did you know that in only 2 Tbsp of Chia seeds, this incredible native ingredient from South America, you can find 11gr of fibers, 4gr of proteins, 9gr of saturated fats (5gr of which are Omega3), 18% of the suggested daily intake of calcium as well as 30% of manganese, 30% of magnesium and 28% of phosphorus?
On top of this, Chia seeds help your organism to lower cholesterol and regulate the level of sugar in the blood. So this is a great way to keep your heart feeling GOOD starting from the very first meal!
Recipe for about 4 portions
Strawberries & Vanilla Pudding
Chia Seeds ¼ Cup + 1 Tsp
Ripe Banana 60gr
Oat Milk 1 Cup (230gr)
Citrus or Orange Blossom Honey 1+1/2 Tbsp (24ml)
Vanilla Extract ¼ Tsp (2ml)
Lemon Juice ½ Tsp (2.5ml)
Lemon Zest 1gr finely chopped
Pinch of salt
Optional: Beetroot Juice 1 Tbsp
- Transfer the following ingredients into a blender: Sliced banana, sliced strawberries, oat milk, honey, salt, vanilla, beetroot juice and lemon juice. Note: Beetroot juice is optional, but recommended if you wish to get a very bright pudding.
- Place the chia seeds into a bowl and pour the liquids over the seeds mixing gently with a wisk. Add the finely chopped LEMON ZEST and keep stirring every 5 to 10 minutes. The mixture will be quite liquid at the beginning, but it will reach the right consistency within a few hours or overnight. We make this mix not too dense so it will keep nice and creamy even after 2 days!
- Transfer into a container and store in the fridge overnight.
Avocado & Turmeric Pudding
Chia Seeds ¼ Cup
Ripe Avocado 70gr
Oat Milk 1 Cup + 3 Tbsp (285gr)
Citrus or Orange Blossom Honey 1+1/2 Tbsp
Turmeric Powder ½ Tsp
Pinch of Salt
- Transfer the following ingredients into a blender: Sliced avocado, oat milk, honey, salt, turmeric powder. Blend until smooth.
- Place the chia seeds into a bowl and pour the liquids over the seeds mixing gently with a wisk. Keep stirring every 5 to 10 minutes. This mixture will be more consistent than the other one as we want to achieve 2 different level of creaminess in the end.
- Transfer into a container and store in the fridge overnight.
How to serve:
Place a couple of spoons of avocado pudding into a glass jar or a normal glass.
Dice a couple of sweet strawberries and place them over the avocado pudding.
Add 2 spoons of strawberries pudding on top.
Finish with some thick Greek yogurt which can be seasoned with a drop of vanilla and little honey or another sweetener of your choice.
